Slow Cooker “Marry Me” Chicken with Linguine

Serves 4-6
20 minutes prep.
3 hours cooking.

INGREDIENTS
1 brown onion, finely diced 2 chicken breasts
1 220g jar sundried tomatoes, drained of oil 2 heaped tsp minced garlic
2 tsp paprika 2 tsp mixed herbs
3 tbsp red pesto 1/4 cup white wine
2 cups chicken stock 60g baby spinach
3/4 cup thickened cream Linguine

* to serve (options): fresh basil, parmesan, crusty bread.

METHOD
Into the slow cooker, add chicken breasts, diced onion, sundried tomatoes, garlic, paprika, herbs, pesto, white wine & chicken stock.

Cook on high for 3-4hrs.

Meanwhile, cook your linguine (or other chosen pasta) per packet instructions, in salty water until tender. Drain and set aside.

Once the slow cooker is finished, shred the chicken, then add spinach & cream.

Serve the chicken on top of the linguine, topped with parmesan, basil, and add any additional garnishes*.
